El estado nutricional se define como la condición corporal resultante del balance entre la ingestión de alimentos y su utilización por parte del organismo. Su evaluación tiene la finalidad de identificar una posible malnutrición por exceso o por defecto y discriminar el origen de la misma.

Eunutrición es el término que corresponde a un estado nutricional correcto, mientras que se entiende por malnutrición cualquier alteración de la normalidad. La malnutrición responde a una gran variabilidad de situaciones y puede clasificarse atendiendo a diversos criterios: etiología, tipo de alteración, intensidad, duración y evolución terapéutica.

En este curso se explicarán todos los análisis y estudios que se realizan para llegar al diagnóstico del estado nutricional del paciente, las ventajas y desventajas de la antropometría para el conjunto de la evaluación nutricional y las distintas encuestas alimentarias que se realizan para el control del paciente.
